Our famous long-table is headed to the vines of Champagne for one-night only: and you are invited!

There are few names in the world of wine that resonate as does 'Champagne'. Not just a region, but a symbol. Precision, celebration, ritual. Centuries of refinement shaped by Kimmeridgian limestone soils, cool climates, and an uncompromising standard the rest of the wine world still chases.

On Saturday 8 August, Table & Terroir arrives at its source.

Set among the vineyards of Domaine Sainte Eulalie, this experience unfolds where Champagne truly begins — not in the cellars, but in the land itself.

Just outside the medieval town of Troyes, this part of Champagne reveals a quieter, more authentic side of the region. Half-timbered houses, rolling hills, and open skies.

Only 90 minutes from Paris, but a world away.

The Producer: Edouard Duval
Edouard Duval embodies a new generation of Champagne growers, combining deep respect for heritage with a clear, contemporary vision.

His approach is rooted in the precise expression of terroir. Thoughtful viticulture, restrained winemaking, and a commitment to clarity over excess define his style. Each cuvée reflects both place and intention — crafted with precision, and without compromise.

The Chef: Thomas Valleron
Thomas Valleron is one of the most compelling young chefs in France today. At the helm of L’Aube des Sens, his cuisine is defined by precision, restraint, and a deep respect for ingredients.

In 2025, he was crowned France’s Oeuf Mayonnaise Champion — a title that, in France, speaks volumes.

A test of fundamentals, where nothing can be hidden. Only technique, balance, and judgement. He mastered it. Expect that same level of control and clarity throughout the evening.

Troyes is just 90 minutes from Paris by direct train.

While many guests will choose to drive to the Domaine, we offer a selection of curated packages including accommodation and transfers, for a seamless experience.
